I Made Vegan Tacos... And They Are Amazing
Hooray to my first recipe!!!
It doesn't matter if you're vegan or not I think you will LOVE this.
Of course it was cost efficient, and fast! I'm not trying to waste y'all money or time Okayy!
Doesn't this look like meat, and it looks so good!
So this is what you will need:
1 can of jack fruit ( I got mine from Sprouts)
1 can of salsa verde (Kroger) (make sure you refrigerate it)
1 lime (Sprouts)
1 jalapeno (Sprouts)
1 bunch of fresh cilantro (Sprouts)
1 pack of corn tortillas (Sprouts)
Now lets cook
Wash your hands lol
Open your can of jack fruit. My fruit came in chucks; you can either shred it with you hands as I did or a fork whatever works best for you. You want it to look like shredded meat.
Use olive oil to heat up your pan and place in shredded jack fruit along with taco seasoning pack ( I added more chili powder and paprika... it's not a must I just like to) .. while that is cooking you can also place in your jalapeno so it can start to get charred roasted
I cooked my "meat" for about 15 minutes
Then I removed the "meat" from the pan and left in the jalapeno for another 15-20 minutes alone
Quick Tip: So the pan I used is a grill pan that comes with a lid. I believe having the heat closed in speed up the jalapeno process, but regardless it can be done with any type of pan!
Once the jalapeno is completed, remove it from the pan. Then oil your same pan and place in your corn tortillas
When the tortillas are heated up to your liking. ( I doubled my tortillas, because that's what they do at the taco trucks)
Add in your "meat", drizzle your verde salsa, plop your cilantro on top, squeeze your lime, and peel the skin of your jalapeno and place it inside ( or however you want to eat it)
p.s. I forgot to buy an onion, so make sure you grill your onions and put on top. I saved left overs so I can do it tomorrow but it was still perfectly amazing without them!
